Here’s my week in food, yours to peruse for some Monday inspiration.
This week I have become a big fan of pumpkin seed pesto (recipe to follow!) and have put it in pretty much everything. Above it garnishes some yummy quinoa – courgette – pea – onion goodness. The nuttiness of the pesto really complements the nuttiness of the quinoa and really hits that midday spot.
I was rather impressed with my fake moussaka, so this is another recipe I will be sharing soon. I bypassed the creamy sauce, but packed in the flavour with plenty of cinnamon and cumin, and my newest discovery – nutritional yeast! I also swapped the lamb for veal, which I find lighter and easier to digest.
The weekend meant I allowed myself some naughtiness (in the form of lavishly buttered thins) and settled down to some breakfast in bed, featuring fried egg and Quorn sausages. I was actually quite surprised by these, they’re not half bad.
Probably my favourite pumpkin seed pesto pairing: green beans! The flavours go so well together, this makes such a great snack on its own. For a heartier meal, I had them with some leftover moussaka and some grilled med veg quinoa (might have snuck some pesto in there as well).
Today’s colourful lunch raised my Monday morning spirits: prawns, courgettes, carrots, broccoli and green beans on a bed of spinach and – you guesses it! – pumpkin seed pesto. So pretty and very filling.
