Here’s my week in food, yours to peruse for some Monday inspiration.
I’ve had quite a stressful week, and that normally translates into one thing, foodwise: carbs glorious CARBS. Here are some of my highlights this week…
Tasty pork steak atop a generous helping of broccoli, peas and edamame beans garnished with (my favourite!) pumpkin seed pesto. The naan provided some much needed good ol fashioned stodge.
We tried out Wetherspoon’s new Mexican Monday last week. I’m a big fan of Wetherspoons and I a big fan of nachos, so it all went down very well. I have rediscovered nachos quite recently, I never really considered them a possibility for me, laden as they usually are with raw toppings (I am allergic to all raw fruit,veggies and nuts), but actually i rather like them bare! Tortilla chips, shaved ribeye steak and sour cream. Mmmmmmm.
Lovely brunch option: egg and spring onion mayo stuffed into pitta bread. Heaven.
Cheesy spinach pasta has been one of my favourites since I was a child. I find it works best with either cheese spreads or ricotta, but here I made it with cheddar and it was still wonderfully comforting. Also, I feel less guilty because it was brown rice pasta. Positively healthy.
A good alternative to pasta is shirataki noodles, which I shovelled down for lunch today with some deliciously juicy pan-fried salmon.
