Here’s my week in food, yours to peruse for some Monday inspiration.
PASTA AL RAGÙ! My absolute favourite! Healthy (I try to convince myself) brown rice pasta in a creamy bolognese sauce. The secret is to add milk to your sauce. Yumm.
Possibly out of guilt for the carb overload, my next meal was shirataki noodles with veggies (broccoli and med veg with lots of garlic) and pan fried salmon, another favourite. Actually, you can combine the two – shirataki noodles and bolognese sauce pair surprisingly well!
We had a dinner-and-cinema date night on Tuesday, and Wagamama is always one of our top choices. Uncharacteristically for me, I branched out from my usual Cha-Han and opted for chicken and prawn Pad Thai. Shouldn’t have, I prefer my usual. It looks good though, right?:
This is a good one for post-swim nourishment: a comforting veggie burger with broccoli and sweet potato rösti (which actually ended up being more like grated sweet potato, as they refused to stick together. Still very nice).
Quinoa with chunks of chicken and grilled vegetables: simply delicious.
Had some leftover quinoa and grilled veg, to which I added this week’s favourite: ragù! It really does just go so well with everything.
I am a big fan of noodles in any shape or form. Here are some brown rice soba noodles with green beans, edamame beans, red onion, broccoli, prawns and strips of flavoursome pork steak. All rendered more flavoursome by plentiful lemon and garlic.
And finally more shirataki noodles! Trying desperately to cut the odd calorie, here they are with prawns, peas, broccoli and grilled vegetables.
